A Simple Spring Dessert That Feels Like a Weekend Treat

Spring has a way of encouraging slower moments brighter mornings, open windows, and casual get-togethers that don’t need much planning. And when it comes to dessert this time of year, simple usually wins.

This is the kind of recipe that feels special without being complicated. It works just as well for a quiet weekend at home as it does for sharing with friends or family. No layers, no special equipment just familiar ingredients and a comfortable, seasonal feel.

 

Easy Berry Crisp (A Spring Favorite)

Berry crisps are forgiving, adaptable, and perfect for spring. You can use fresh or frozen fruit, adjust the sweetness to taste, and serve it warm or at room temperature.

Ingredients

For the filling

  • 4 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 2 tablespoons sugar (optional, depending on sweetness of berries)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the topping

  • ¾ cup rolled oats
  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ½ teaspoon cinnamon
  • 6 tablespoons cold butter, cut into small pieces
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F.
  2. Prepare the filling: In a bowl, gently mix the berries with sugar (if needed), lemon juice, and cornstarch. Transfer to a lightly greased baking dish.
  3. Make the topping: In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the butter using your fingers or a fork until the mixture resembles coarse crumbs.
  4. Assemble: Sprinkle the topping evenly over the berries.
  5. Bake: Bake for 35–40 minutes, until the topping is golden and the fruit is bubbling around the edges.
  6. Cool slightly before serving.

Serve on its own or with vanilla ice cream or whipped cream.
